Ok after like 5 hours one 4 tech suppport calls with apple. I still don't have a reliable working solution or answer maybe someone here can help.

Aiport Utility on my Macbook, which took ages and in the end threw an error, even though the Express looked to be set up and working fine. Aiport Utility keeps losing the Express too.
